Makes approx. 12 parcels
Cook the onion in olive oil until soft and golden brown, leave to completely cool. In a bowl add the brie and mix in the onion. Season and mix well. Divide into 12 equal quantities.
Cut the filo pastry into squares approx. 10cm by 10cm, take 1 square and brush with oil, lay a second square on top at a slightly different angle. Repeat again with 1 more square.
Place 1 piece of the brie mix in the middle of the pastry and spoon a little cranberry sauce on top of the brie. Bring all the edges of the pasty together above the brie and squeeze tightly to seal.
Place the parcels on a tray lined with baking paper and cook at 180C for 10-12 minutes until the pastry is crisp and golden.
