Smoked Salmon Mousse On Melba Toast

A classic crowd-pleasing canape that no party would be the same without. This smoked salmon mouse recipe is deliciously refreshing.

Ingredients

200g smoked salmon
200g double cream
Juice of ½ a lemon
Pinch of cayenne pepper
Salt
Melba Toast
For garnish:
Cucumber
Dill sprigs
Lemon

Method

Step 1

Cut the salmon into small pieces and put in a food processor, blend until smooth. Pass the salmon through a drum sieve into a bowl.

Step 2

Add a little of the cream and mix well, add a little more and mix well, repeat this until all the cream is mixed into the salmon. Season with a little salt and a pinch of cayenne pepper.

Step 3

Put the salmon mousse into a piping bag. Pipe some mousse onto each piece of Melba toast and garnish with cucumber, a dill spring and lemon.
