Ingredients

1 red pepper, deseeded and cut into pieces1 yellow pepper, deseeded and cut into pieces1 courgette, sliced1 white onion, peeled and cut into pieces½ red chilli, deseeded and finely chopped80ml olive oil200g cous-cous1 tsp paprika½ lemon, juice½ bunch fresh chives, chopped½ bunch fresh parsley, choppedSalt and pepper to taste

Step 1

Pre heat an oven to 180ºC. Mix the peppers, courgette, onion, chilli, seasoning and 60ml of the olive oil in a bowl.  Transfer to a baking tray and cook in the oven for 6-8 minutes until soft.  Remove and set aside to cool.

Step 2

In the meantime, add the couscous to a heat proof bowl and add the remaining olive oil. Pour over 300ml of boiling water, cover the bowl with cling film and set aside for 8-10 minutes until fluffy and all water has been absorbed.

Step 3

Break up the couscous with a folk and mix in the cooked vegetables, herbs, paprika, lemon juice, seasoning and some more olive oil to taste.
