Minestrone

A traditional Italian soup absolutely bursting with flavour.
Soups Slow Cooker

Ingredients

25g butter
1 clove garlic
1 large leek
1 large carrot
1 large potato
1 large onion
2 celery sticks
175g cabbage
400g canned tomatoes
Salt and pepper to taste
1.1L chicken stock
2 bay leaves
50g thin cut macaroni
 

Method

Step 1

Preheat the slow cooker on High for 20 minutes.

Chop the carrot, potato and onion; slice the leek and celery and shred the cabbage.

Step 3

Combine all ingredients (except macaroni) into the slow cooker. Cook on Low for 5 hours.

Add macaroni and cook further for 1 hour, or until cooked. Adjust seasoning if necessary and serve with grated parmesan cheese.
